Frugal Recipes: Hamburger Stroganoff

This is another one of the family favorites. My mother used to cook it when I was a child and it was one of the best meals we ate. When I made it, my kids and their friends always come back for seconds. Now when I make it, I put half in the freezer BEFORE I serve it, otherwise, there are no leftovers.
It’s a simple and filling recipe that seems to please even the pickiest of eaters. You can make it in the crockpot or on the stove, serve it over rice, noodles, fettucine or toast. you can leave out the onions or mushrooms but I have never had a complaint about them. Most of my recipes are flexible in that you can serve them different ways or prepare them a bit differently each time. It helps me use up whatever is on sale or on hand.
I generally make up a double batch of this and if you choose to do so, just double the recipe.
Hamburger Stroganoff
1 lb Ground Beef
1/2 onion chopped if desired
1 can Cream of Chicken Soup
1 cup Sour Cream
1 can Mushrooms or 1 cup Fresh Mushrooms
salt & pepper to taste
Brown the ground beef with chopped onion. Once brown, add Cream of Chicken Soup and stir to mix. Heat thoroughly, about 10 minutes on low heat. Add Sour Cream and Mushrooms. Let simmer for another 10 minutes on low heat. Serve over rice, noodles, fettucine or toast.
Makes 6-8 Servings, cost $.75/serving
Crockpot variation: Brown Ground beef in skillet with onions. Put into crockpot with other ingredients & mix well. Add 2 cups of long grain rice & 3 cups of water. Put on Low heat for several hours.
Variations: Substitute Ground Turkey for Ground Beef
Serve with a fresh garden salad and fresh homebaked bread for a great meal.
