Triple Chocolate Cherry Cupcakes Now I bet you are wondering what chocolate and cherries has to do with emotional spending. From what I have read, emotional spending is driven by the same urge to splurge that drives the craving for chocolate. Chocolate is also known to have chemicals in it that can relieve depression.

So when you are buried in debt and having a really bad day, instead of going out on a buying spree, stay home and make Triple Chocolate Cherry Cupcakes. These are absolutely scrumptious and while they won’t save your diet, they might save your budget.

Triple Chocolate Cherry Cupcakes

1 Box Chocolate cake mix
2 Eggs, Beaten
1 can Cherry Pie Filling
1/2 bag mini chocolate chips

1 Can Chocolate Frosting

Mix all ingredients except frosting in a large bowl with a rubber spatula. Do not use mixer. Gently stir until all cake mix is moist. Spoon into well greased cupcake pans, filling 1/2 - 2/3 full. Bake at 350 degrees for 22-25 minutes. Cool completely and frost with chocolate frosting.

Total Cost:

Cake Mix $2.19
Cherries $1.99
Eggs .25
Choc Chips $.1.75
Frosting $1.50

Total $7.68 for 24 cupcakes

Cost each: $.32

The original recipe called for making them in a 12×9 inch pan and cutting them into bars. I find that if I do that I feel obligated to eat them all rather quickly. By making them into cupcakes, I can freeze them and frost just before serving.

Not cool! Those cupcakes look and sound way too good for me to be looking at late at night. That is just plain cruel.

May help with the emotional spending, but sure wouldn’t help with the diet - which I have pretty much blown anyway.

They are… better than sex, well almost. Wish I could send them in email as my diet won’t stand for me eating the whole 24 no matter how much my budget likes it.

Tell your wife if she cooks them, you will be way too full to think about work. :)

Betty, I love pudding too and don’t know why I don’t make it very often.

[...] My major accomplishment is that I still have the house and the business and I am still getting through from day to day. And I can still afford one more batch of Triple Chocolate Cherry Cupcakes. [...]
